My Favorite Pinterest Meals

Today I was going through and cleaning up my Pinterest boards (seriously, I am not going to make all of those recipes), and I decided I would share with you a few of the most successful and delicious things I have found there. I have made all of these, and they have turned out amazing, and I have made them all again. So please enjoy :)

World's Best Mac and Cheese: No joke, this is the best homemade macaroni and cheese I have ever eaten. It is so good, and I have made it multiple times. I have to go to Trader Joe's to get the fancy cheeses, but it is worth it like a million times over. Thank you, Martha Stewart.

Skillet Lasagna: It's apparently "skinny" lasagna if you make it with the ingredients she says, but it most definitely does not taste like it. It's really easy to make and doesn't take very long. It's definitely a good choice if you are craving fancy Italian but don't want to take a long time to make it or use a ton of calories.

Baked Sweet and Sour Chicken: This is definitely Dan's favorite thing I make. If I made it every night he probably would never get sick of it. I've made it for my parents and sister, too, and they loved it as well. It is kind of complicated and takes a while, but it's definitely worth it to hear the praise of your husband as he goes back for seconds, thirds, and fourths.

Tortilla Soup: Now I've obviously never made this with the chicken like the recipe says, but it is AMAZING even without it. I was craving this the last few weeks and I finally made it and we were both very happy. I usually add avocados when I serve it and it is perfect. It's a crockpot recipe so all you have to do is cut vegetables and open a few cans, so it's definitely easy. Please make this if you love your tastebuds.

I might add to this later, but these are definitely my top four favorite Pinterest meals I've ever made. Go make them and be happy.

Three Years Later

On Wednesday (the 23rd), Dan and I celebrated our three-year wedding anniversary. It's crazy that we've been married for three years! We've known each other for almost four years, and so much has changed since then. Since we were married, we've lived in four homes, three states, graduated from college, Dan has started medical school, and we now have the most perfect little baby in the world. We've been to Mexico three times, California once, Las Vegas once, Orlando once, and to Belize, Honduras, and Grand Cayman. I have everything I have ever wanted. I never thought I would ever have so many blessings in my life, and I never thought I could be this happy. Unlike a lot of women my age, I chose to marry young and have a baby, and those were the best things I could have done. Being a wife and mother is my favorite thing in the whole world, and I can't imagine going through life without having those roles.

So three years after getting married to my best friend, I am the happiest I have ever been.

One Month Update

I've discovered it's way harder to sit down and blog with a baby because when he sleeps you end up doing things around that house that need to get done. But I have everything done right now so here we are!

The last month has been the happiest of mine and Dan's lives. We have the best, most perfect little baby boy. I can't believe he is ours. He has changed a lot in his first month of life. Here are some things about him:

  • He smiles and coos a lot. It's the cutest thing ever. And he makes this little squeaking noise that melts my little heart.
  • While he is longer than he was at birth, he's not a lot chubbier, except his cheeks. He has only grown out of like three things, still wears mostly newborn clothes, and is still in newborn diapers. I tried putting him in size one when we ran out of newborn ones, and we had a leaking diaper followed by a poop-out. So we bought more newborn diapers.
  • He likes bath time. I think it's mostly that he enjoys laying in the warm water and having it poured over him. But he doesn't scream like he did the first few times!
  • The longest he has slept at night was seven hours straight, but most nights he wakes up to eat every 2-4 hours. Which is okay. I actually am not really too tired (but I go to bed when he goes to bed around 9:30).
  • He is awake more than when he was little, and a lot more alert. He likes to stare at lights and pictures on the walls, and he'll focus on things really well. He's stopped going cross-eyed like he did sometimes when he was fresh.
  •  His hair is growing a little and it's definitely blonde. He has a decent amount in the back, and not very much on the sides. It's super cute when you brush the top back and it sticks up. Cutest baby ever!
  • He enjoys car rides and being in his car seat, as long as it's moving. He falls asleep pretty quickly when we get in the car to go places.
  • We've decided that he looks a lot like baby Dan did, except with my eyes.
  • He sleeps in the crib now! The first few weeks he wouldn't, but we've gotten to the point where as long as we have music playing and he's swaddled, he'll sleep in his crib. Which is great.
Pretty much, he's the cutest, sweetest, and best baby ever. We are so grateful and blessed to have him in our lives. The good times when he is awake and happy more than make up for the times when I get a little frustrated because he is crying. Which isn't very often because I know how to make him feel better usually. But he is the most amazing little person, and I can't wait to see what kind of little man he becomes.

And of course, here are a bunch of wonderful pictures and videos of our little guy:
